Andrew saddles up for life as a cowboy in Texas, immersing himself in the rugged traditions and bold flavors of the modern West. He heads to the Elick Ranch, where he joins "outlaw chef" Terry Chandler and his chuck wagon crew for a feast where nothing goes to waste. While waiting for Terry’s legendary Son-of-a-Bitch stew, Andrew helps Richard, the camp’s blacksmith dispatch with skinning a deadly rattlesnake. The night then brings a feast of grilled bone marrow, ribeye skewers, and bacon-wrapped calf hearts. In the morning, after a hearty breakfast of scrambled calf brains with chorizo, Andrew rejoins John Elick to experience the hard work of cowboy life—cattle roping, branding, and castrating. John and his ranch hands showcase expert rope work to restrain calves for branding and castration. True cowboys know that some of the tastiest parts of a calf come from this process, so instead of deep frying, Andrew hard sautés the testicles with lemon, salt, onion, and hot chili to highlight their mild, earthy flavor.
