INGREDIENTS
3 pints Fresh Strawberries
2 Eggs
1 Madagascar Vanilla Bean Pod 1 cup Milk
2 cups All Purpose Flour
1 Teaspoon baking powder Sugar
Salt
Cinnamon
Vanilla Ice Cream
METHOD
1. Whisk 2 whole eggs and 4 tablespoons of sugar together until eggs are beaten.
2. Take one Madagascar vanilla bean pod and carefully split it down the middle and open
up the centre. Using a knife, scrape the inside of the pod and add the vanilla bean to the
bowl.
3. Add milk, half your flour and whisk until all the lumps are removed and you have a
smooth, runny consistency. Add the rest of your flour, a pinch of salt and one teaspoon of baking powder. Whisk again until all the lumps are gone, then put in the fridge to cool until you are ready for frying.
4. Next, make your simple syrup. Bring 1 cup of sugar, and 1 cup of water to a boil in a small saucepan, and add your empty vanilla bean pod.
5. As the syrup is boiling, remove the tops of half of your strawberries, and cut them in half. Add them to your syrup as it is cooking down to create your strawberry sauce. Take your smallest strawberries and cut the tops off, then add to your strawberry sauce, whole. Turn off the heat and allow to macerate.
6. Mix your funnel cake dust by mixing 3 tablespoons of cinnamon with 3 tablespoons of sugar.
7. Take your fryer or large heavy bottom pot and fill with canola oil. Heat your oil to 375 degrees. Put a wire spider in the bottom of your fryer to help collect your funnel cake. Then, take 2-3 tablespoons of your batter, and spoon it into your funnel, with your fingercovering the spout. Hold your funnel over the hot oil and release your finger, swirling the
dough into the fryer in circular motions.
8. Fry until golden brown, flip using your 2-3 times as needed. Place on a wire rack to drain
off the oil, then dust with your cinnamon-sugar powder, making sure that it is completely covered. Put on a plate, then spoon over strawberry sauce and top with vanilla ice cream. Enjoy
